For the Shrimp:


Add 1 Tsp of oil or butter to a pan with 3 cups of water and 1 tsp of salt. Bring water to a boil. Add grit and stir often to avoid clumps. Taste for doneness then crush the garlic and add it to the grits. Let it simmer at very low heat for about 15 minutes.

Clean the peeled raw shrimps by letting them soak in lime juice and salt for 15 minute and rinse well with cold water.

Marinate the shrimps with ½ cup of Kreyolli jerk marinade. Use a pan (preferably a non-stick one), melt the 2 Tbsp. of butter, add the half chopped red onion, let it simmer for about 1 to 3 minutes, then add the marinated shrimp. Keep on stirring and turning them for even doneness. Let it cook for about 5 minutes on a low heat to overcook. Serve over the grits while hot.
